Riesling Fallwind DOC
This grape variety of Germanic origin has found an ideally adopted terroir in South Tyrol. Riesling needs special conditions and prefers a cool and sunny climate. These conditions are present in the areas around Lake Monticolo and in neighboring microzones, where the porphyry soils give the wine its special character. Riesling Fallwind stands out for its fruity aromas and mineral freshness that make it an increasingly popular champion.

Exposure: South-South / East slopes
Soils: gravelly and moraine deposits

HARVEST:

end of September to beginning of October; manual harvesting and selection of the grapes

VINIFICATION:

fermentation in steel containers. Subsequently refinement on fine lees for another 5 months.

MATCHING TIPS:

It is a true all-rounder that goes as much with light fish dishes as with those of Asian cuisine and recipes based on vegetables. In spring, it is recommended with asparagus salad and dishes based on Tyrolean "Easter" cooked ham and Bolzano sauce. A pleasure also in combination with goat cheeses.
