The grapes for Pinot Noir Rosè are produced on Guyot plants in the highest vineyards of the municipality of Montagna, located between 700 and 750 meters. The soils are of erosive origin in the Dolomites. The high density and the choice of carefully selected clones guarantee the high quality of the grapes. After destemming, the grapes are pressed, as for the white varieties, and the must finally ferments in barrique. Thanks to the fermentation in wood, the bouquet of the wine is more complex. After about a month the young wine is drawn off and remains in steel for another six months, where malolactic fermentation takes place. Pinot Noir Rosè shows a light cherry red color. The fresh and fruity bouquet opens with aromas of red berries, cherries and raspberries to close finally with notes of aromatic herbs and a hint of cocoa. On the palate the wine amazes with its fresh acidity, long flavor and inviting refreshing finish. This rosé served at the right temperature is ideal as an aperitif and can be combined with simple fish dishes, first courses of Mediterranean cuisine and finally goes exquisitely with cold cuts and fresh cheeses.
