The wine is a Petit Manseng, a typically French grape variety from the Jurancon area, in the French Pyrenees.
Three cuttings were given to Franz and on the return of his trip to France, they were planted and multiplied by us and by a single contributor who works only organically.
Given the high acidity and intense aromas, it was initially thought to be added to Manna, but the pleasant result led us to bottle it as a single grape variety.
PRODUCTION AREA
Petit Manseng grows on alluvial soils, in the low hills between 220 and 320 meters and is grown on Guyot plants. The bunch is very sparse, with particularly small berries and thick skin.
VINIFICATION METHOD
Fermentation takes place in barriques where it lies for about ten months and is then put in the bottle to rest for several months.
WINE DESCRIPTION
It is a particularly aromatic wine with a straw yellow color. The aroma is very intense and fruity (dried fruit) with mineral notes, while on the palate it is sapid, with a good acidity and structure.
MATCHING
Served cold at a temperature of twelve degrees it is very captivating and goes particularly well with Asian cuisine, Thai soups, fish soups, pasta with bottarga or you can simply enjoy it as an aperitif.
