Vinification

Soft pressing of the grapes, followed by static settling of the must. Fermentation at controlled temperature of approx. 20°C. A part of the must (approx. 15%) is fermented and aged in French oak barriques for 5 months. After the racking at the end of fermentation, the wine remains on the lees for a long time. The assembly takes place in the spring.

Tasting

The Chardonnay "Cardellino" presents itself to the eye with an intense straw yellow. A complex play of fruity aromas, orange and lemon peels, notes of linden blossom, mineral profusion and a spicy hint of tobacco characterize the bouquet. This classic by Elena Walch convinces on the palate with its freshness and lively minerality which continues elegantly to close in a long, intense and soft finish.
