Vinification
Harvest and selection of manual grapes. Destemming of the berries and subsequent slow fermentation at a controlled temperature, and delicate handling of the must in stainless steel tanks. Malolactic fermentation and aging for 7-8 months in large wooden barrels.

Simple pairings
South Tyrolean dishes such as smoked cold cuts (speck and bresaola), but also venison salada with mushrooms in oil and fresh cheese mousse, or sour beef. Another interesting combination is the one with tagliatelle with sausage, or mixed boiled meat in green sauce on a bed of potatoes with parsley.

Perfume: With a clear fruity aroma that at first glance recalls elderberry and cherry, flanked by an aroma of bitter almond and a hint of violet, Santa Maddalena is a wine that is very convincing in the nose.
Taste: The fruity taste is also present on the palate, but softer and more elegant, giving this wine, together with its balanced acidity and low tannic level, uniqueness and class
