The winemaker carefully chooses the best grapes and the varieties that best adapt to the soil, giving life to typical wines of great character and complexity. Sauvignon Mock combines citrus and floral notes with a strong minerality and notable structure.

September harvest

Vinification: soft pressing of the selected grapes, fermentation at a controlled temperature and maturation in steel tanks to maintain the freshness of the wine.

Characteristics

Colour: straw yellow with greenish reflections

Bouquet: tomato and nettle leaves, green peppers, mint, fruity hints of yellow peach and pink grapefruit, acacia and elderberry. When aged, it develops interesting mineral notes and flint nuances.

Taste: fruity taste with delicate and balanced acidity, good structure and persistent aftertaste, excellent as an aperitif, accompanied by dishes with asparagus, fish dishes, light or vegetarian dishes.
