The bunches are lightly crushed and the must is left a few hours in contact with the peel to enhance its varietal characteristics. After a soft pressing and sedimentation of the must, it ferments at a controlled temperature.
AGING
After fermentation the Kolbenhof Gewürztraminer ages for 8 months on fine lees. fine yeasts are gently moved weekly (Battonage).
GASTRONOMIC COMBINATION
Splendid to be tasted in absolute solitude, it finds the most worthy pairing in shellfish, in the preparation of fish of a certain structure, on foie gras and is wonderful with Thai cuisine.
