Billecart-Salmon is one of the rare products from the old catalog that survived my entry into Velier. When I arrived in 1983 to manage the company, I, who had been baptized with a drop of Pommery, did not know him and thought of replacing him. I changed my mind when I visited the cellar, an exceptional family business, with a product that was selling off at the time. For more than 50 years, we have worked with three generations of the family, passed from Jean-Roland Billecart to his sons Antoine and François, and today to Nicolas, François' son. Before being a champagne, Billecart is a wine, with the same production techniques as the origins, if not better; one of the last companies still family-owned, with a heart and a soul.

HISTORY
The history of the Maison begins in 1818, when Nicolas François Billecart and Elisabeth Salmon married and founded their champagne Maison. It is the story of a family, because Louis Salmon, Elisabeth's brother and a wine enthusiast, also participates in the production of wines. Today, after seven generations, the whole family still contributes to passing on the tradition, remaining faithful to an immutable commitment: "Prioritize quality, aim for excellence". The Brut Reserve, the Maison's best-selling bottle, reflects this philosophy well. Today, Billecart-Salmon champagnes are among the most recognized and appreciated in the world.

PRODUCTION METHOD
Billecart-Salmon uses ancestral winemaking methods, passed down from generation to generation and improved year after year, thus combining the most ancient techniques with the most advanced winemaking technologies. Among these improvements is the technique of refrigeration of the must combined with the use of steel, or even low-temperature fermentation. The vinifications instead take place strictly according to tradition, in small fifty-hectoliter wooden barrels. The categories of Champagne are classified according to the various sugar levels, between the vintages and the special cuvées.
