Innocenzo Borrillo, born in 1871, trained at a young age at the Caflish pastry shop in Naples and then returned to his hometown and opened his own pastry shop. Here he created the famous "Baci" nougat, a crunchy almond and hazelnut topped with fine dark chocolate. The intuition of sealing everything with a layer of chocolate allows the flavor and crunchiness to be preserved, making the nougat famous throughout the world.
Innocenzo Borrillo participates in competitions and exhibitions, promoting his sweets and, receiving many awards, making his products known even outside Italy, and in 1898 he was awarded the coveted Legion of Honor of France. Cassatine, sospiri, pasta reale, pasta secche, classic nougat, are creations of the master pastry chef that are still made in the laboratory according to the recipe from the late 1800s.
Cav. Innocenzo Borrillo ran his business with passion, later joined by his son Arturo, who then replaced him after his death in 1970 at the age of 99.
Today at the helm of the "Premiata Fabbrica di Torroni" there is once again "an" Innocenzo Borrillo, who with commitment and passion carries forward the dream of his beloved grandfather, guarding the ancient recipes like little treasures.
