The bunches, collected at sunrise in small boxes, are crushed and destemmed and descend by gravity into the press, where a short cryomaceration takes place.
The must will ferment at a controlled temperature for about three weeks with subsequent maturation on the fine lees.
10% is placed in acacia tonneau to refine, without distorting, the floral scents typical of the grape.
