Tasting notes
Ruby red wine with reflections of aubergine peel. With a frank, clear scent, which is divided into many sensations among which we can recognise: small undergrowth fruits such as raspberries, blackberries, ripe fruit (cherries and plums), and delicious notes of tobacco.
In the mouth it reveals a clear, harmonious wine, extract and tannin make it very full.
It closes with great complexity, revealing itself as soft, salty, fragrant and spicy.
It goes well with red meats: stewed roast, ideal with dark meat poultry such as guinea fowl, pigeons, ducks, geese.
Production notes
Fermentation in wooden vats, aging in small oak barrels for about a year and refinement in bottle for 12 months before marketing.
Tasting notes
The color is delightful garnet color towards a light ruby. Its bouquet is very persistent with hints of wild berries, raspberry and strawberry. The taste is similar to the bouquet, the fruiti s generous and exciting: a light berry quality along with zesty acidilty and mild tannins. Our Pinot Nero pairs well with midly-seasoned red meats (stewed roast) interesting for pairing with dark meat poultry such as guinea fowl, pigeons, ducks, geese. It can also be accompanied with fish, such as tuna tartare and smoked salmon.
Production notes
Fermentation and short aging in steel with brief maturation in wood.
