The wine
For 5 decades, Cabreo has expressed the perfect harmony between tradition, innovation and vocation for the territory in which it was born: Greve in Chianti. The result of a careful dosage of Merlot, Cabernet Sauvignon and Sangiovese which respectively bring softness, strength and finesse and of long refinements in small barrels of French oak.
The 2020 vintage is purple red, crystalline and bright, on the nose it presents a synergistic sensorial profile between the descriptors of wood and those of cabernet. Partially tamed by the softness of the merlot. In the mouth it expresses the young maturity of a great red, alternating pleasant tannic sensations with sweet vinous sensations. Nose and mouth constantly evolving in the glass. Descriptors: morello cherry, coconut chocolate, vanilla and final tobacco and infusions.

The earth
Production Area: produced with grapes coming from vineyards of the Cabreo estates located on the hills of Greve in Chianti
Altitude: approximately 300 meters above sea level.

In the basement
Vinification: in stainless steel wine vessels at a controlled temperature of 28°C. Maceration on the skins for 18 days
Maturation: in French oak barrels (225 litres) (30% new, 40% one year, 30% two years) for 18 months
Refinement: minimum 6 months in bottle

The territory
Tenute del Cabreo extends over two areas within the municipality of Greve in Chianti: Zano located between Greve in Chianti and the historic village of Montefioralle and Casa di Sala in Panzano in Chianti on the highest hills of the Chianti Classico. Soils rich in skeleton and marl deriving from the Pliocene on the Zano estate and white clay and marl in Panzano in Chianti characterize the elegance, longevity and complexity of the cultivated grapes.

The Vineyards
In the early 1970s, Ambrogio and Giovanni, after careful observation of French viticulture, selected clones of Cabernet Sauvignon and Merlot which together with the native Sangiovese they used for the production of Supertuscan Cabreo. The Chardonnay and Pinot Noir grapes, however, were better suited to the Panzano area where, a higher altitude and soils rich in calcareous clay were reminiscent of the renowned Burgundy area.

The Estate
Purchased by Nino Folonari, Giovanni's grandfather, in 1967, Tenuta di Zano extends over approximately 60 hectares of which 45 are planted with Sangiovese, Cabernet Sauvignon and Merlot and the remainder are wooded or with rural settlements; two of these were redeveloped by the Folonari family, creating two high-level hospitality structures: Borgo del Cabreo and Relais La Pietra. The winemaking cellar and the historic Cabreo barrique cellar are also located on the estate. At Casa di Sala in Panzano in Chianti 15 hectares of Chardonnay and Pinot Noir are grown.
