In Italy Merlot has found ideal environmental conditions in many Northern regions since the nineteenth century, but it is now widespread with truly surprising results also in Sicily, precisely because Merlot, in adapting to this climate with a strong solar imprint, shows another aspect of its versatile personality, with warmer and spicier flavours.

Training and pruning: Counter-espalier, with Guyot pruning.

Altitude: 350 m. above sea level

Planting density: 5000 plants per hectare.

Yield: 85 quintals per hectare.

Harvest period: End of August.

IN THE BASEMENT

Fermentation: In steel.

Aging: In steel, twelve months in barrique.

TASTING NOTES

Intense ruby ​​red color with purple reflections, with hints reminiscent of blackcurrant, ripe plum, with notes of pepper and blueberries.

The taste is rich and rounded, with soft and smooth tannins.

HOW IT COMBINED

It pairs well with red meats, such as roast beef, boiled meats, roasts, mature cheeses, poultry and stewed rabbit. It can also be considered a wine for the whole meal. Serving temperature 18-20°C
