VINEYARD
Type: Red Wine.
Grapes: 100% Vitrarolo.
Production area: Western Sicily.
Training and pruning: Counter-espalier, with Guyot pruning.
Altitude: 100 m above sea level.
Planting density: 4000 plants per hectare.
Yield: 85/90 quintals per hectare.
Harvest period: First ten days of September.
IN THE CELLAR
Destemming, skin maceration and thermo-conditioned fermentation at around 25°C. Soft pressing and malolactic fermentation. 50% of the mass involves a brief passage in new barrique (about three months), the remaining 50% involves refinement in steel.
Reassembly of the masses and refinement in the bottle for about 6 months.
Type of bottle and bottles per box: Burgundy type with single-piece cork stopper, 6 units per
box. Boxes per pallet: 105.
TASTING NOTES
Description: intense, lively ruby color. Fruity bouquet with hints of red fruit, such as black cherry and
plum, white pepper. In the mouth it shows a good structure, a pleasant freshness and juiciness with
a young and at the same time soft tannin.
HOW TO PAIR
Medium-aged cheeses, sausages, pasta with sauce, medium-elaborate red meats.
Serving temperature: 18-20°C.
