IN THE CELLAR
Fermentation: In steel at about 15° and refermentation in the bottle for 36 months on the lees.
Aging: 2 months in the bottle after disgorging.
TASTING NOTES
Slightly straw yellow in color with fine and persistent perlage. On the nose the bouquet is fresh with fruity notes of green apple, white flowers and yeast fragrances. In the mouth it is fresh,
mineral, harmonious, balanced and savoury.
HOW TO PAIR
Perfect as an aperitif, it goes very well with appetizers and first courses of fish, ideal in combination with shellfish.
