This is a subtle blend of our three varieties and the diversity of our own
Terroir: a fine and complex combination with fruit and delicacy.
Cultivation practices: the vine grows with respect for nature.
Influenced by ecological methods. Vines approximately 30 years old.
Assembly:
• 60% Pinot Meunier.
• 30% Chardonnay.
• 10% Pinot Noir.
• 40% reserve wines from previous years aged in barrels on the yeasts.

Winemaking:
•Hand-harvested at full ripeness, with traditional pressing.
• Alcoholic fermentation in vats, foudres and barrels.
• Malolactic fermentation partially carried out.
• Aging on fine lees.

Dosage: manual disgorgement. 4.5 Gr/l.

Tasting notes:

- Le Rouge et Le Blanc: Rich and complex nose. A record
oxidation. Gourmet and oily palate, well supported by acidity
barely perceptible behind a well-controlled dosage. "a balance
salivation and real length! »

- Selection of Jacques Dupont: lively, spicy, lemony, but
with small touches of toasted bread, maturity, lively and fresh mouth,
with invigorating acidity. A wine that affirms his personality, fresh,
tense, mineral. 17/20
