Blanc de Blancs Brut Nature
Our Blanc de Blancs is made from our best plots on the
southern slopes of Epernay. This is a perfect representation of the
the purity and energy coming from this area and the complexity of the ancient
Chardonnay wines.

Cultivation practices: the vine grows with respect for nature.
Influenced by ecological methods. Vines approximately 35 years old.

Winemaking:
•Hand-harvested at full ripeness, with traditional pressing.
• Alcoholic fermentation in small foudres and barrels with a
little batonage.
• Malolactic fermentation partially carried out.
• Aging on fine lees.
Dosage: manual disgorgement. No dosage.

Tasting notes:
- Peter Liem: It's perfectly balanced as undosed, it's 20%.
of malolactic fermentation, undoubtedly contributing to creating a better harmony of the
acidity, and while there is a pleasant depth of citrus and apple
fruity, together with hints of dried mango and candied ginger,
this wine is really about the soil and the expression of place.
