Maxime Ponson's is an interesting story, which shows how the Champagne area is teeming with new small rècoltant-manipulant. In this case, it is an adventure that begins within a family, the Ponsons, now in their fifth generation dedicated to the production of Champagne under the Pascal Ponson brand in Coulomnes la Montagne, in the Petite Montagne de Reims.
This champagne is made from three different grapes (Pinot noir, Pinot Meunier and Chardonnay) whose vineyards are located in the premier crus of Chamery, Vrigny and the Montagne Coulommes. The alcoholic fermentation lasts over 9 months and is carried out partly in steel and partly in oak barrels. The wine then follows the normal rules of winemaking according to the Champenoise method. Reserve wine is added, the fruit of old historic vintages of the Maison and then the wine rests on its lees in the bottle for at least 48 months.
Tasting Notes: Balanced and mature sip, where the different notes of minerality and structure that are given by the different soils on which the vines are grown seem to be felt. A nose rich in yellow fruits, golden apple and tropical fruit. From the sip thin, delicate, fresh. The acidity accompanies the final length with a notable persistence.
