Chugoku Jozo is a Japanese distillery founded in 1918. The company produces first-generation sake. Chugoku Jozo's Sakuramisen Jyunmai Ginjyo, of excellent quality and great balance and refinement, is obtained using the hattan nishiki rice variety and, following a long fermentation at low temperature, processed by selecting a specific type of yeast, namely hiroshima ginjo, governed by the Toji (cellar master), through the experience handed down over the centuries.
