winemaking
The selection of the grapes is manual and takes place on long selection planes. The grapes reach the truncated cone-shaped oak vats: without temperature management and without the addition of selected yeasts, the must concludes the fermentation and remains in maceration on the skins for about a month

Refinement
The wine evolves on its fine lees for 12 months in French oak barrels and cement barrels, all of small dimensions. Refines in bottle for 6 months

Color
Medium intense ruby red color, very clear tending to transparent

Perfume
Bouquet with delicate floral aromas of broom and roses, fruity raspberry, blackberry and black cherry, to which are added, in closing, surprising spicy notes of star anise and ginger

Flavor
The delicate flavor is surprising for its enveloping softness, a moderate freshness and a nuanced tannins which, overall, make it pleasantly balanced. The final taste completes the taste, which closes with highly appreciated mentholated notes.
