Vinification: careful evaluation of the harvest period; careful selection of the grapes both on the vine and in the cellar; spontaneous fermentation with indigenous yeasts; long maceration on the skins at a controlled temperature in conical oak vats
Refinement - evolution: in 50 hl truncated cone oak vats and in the bottle
Serving temperature: 18°C.
Organoleptic characteristics: ruby red colour; floral notes of violet followed by hints of fresh red fruit, blackberry and cherry. In the mouth it is full and balanced; long finish that reveals tannins of remarkable finesse.
Pairings: red meats, fatty cured meats.
Producer's notes: peak of aging at 2-3 years, longevity over 10 years
