Vinification: careful evaluation of the harvest period; careful selection of the grapes both on the vine and in the cellar; spontaneous fermentation with indigenous yeasts, long maceration on the skins in oak barrels
Refinement - evolution: 12 months in oak barrels, 3 months in steel, 12 months in bottle
Alcoholic strength: 14% vol.
Serving temperature: 18°C.
Organoleptic characteristics: deep ruby red color with purplish edges. Intense and persistent aromas of red forest fruits and spices, supported by tertiary aromas of leather, vanilla and tobacco. On the palate it is full and of good substance, elegant and structured, with dry tannins that manifest themselves in a clean and persistent finish
Pairings: it goes well with dishes of a certain structure such as pan roast, feathered game, furred game (hare, wild boar, roe deer). Excellent with hard and aged cheeses
Producer's notes: peak of aging at 2-3 years, longevity over 10 years
