Grape variety - Cabernet Sauvignon 60%, Merlot 40%.
Planted in 2005.
Density of approximately 6,500 vines per hectare, sapling style. Production of 40 quintals of grapes per hectare.
Soil - Clayey limestone, with south-west exposure. Altitude 250 m above sea level.
Harvest - By hand, in crates, rigorously selecting the best bunches of each plant.
Vinification - Soft pressing and destemming. Separate fermentation of the two varieties in steel without temperature control, with maceration of 15 days for the Cabernet and 20 days for the Merlot. Blending of wines after malolactic fermentation and maturation on its own fine lees for about 10 months, exclusively in steel, with continuous batonnages to obtain greater softness, volume and aromas. Aged for at least two years in the bottle.
Tasting notes – Ruby red color. Complex and elegant nose: carob, black fruit and plum compote, a balsamic hint on roasted notes. The entry is balanced, with good structure with soft and well-integrated tannins. Freshness and flavor accompany a long finish. Serve at 16-18°C. Notes by AIS Romagna.
