From the agronomic genius of one of the greatest and most unknown Italian scholars and dedicated to Senator Raffaele Cappelli, this stubborn and generous variety of wheat is capable of condensing the sun of the Murge and the true and sincere taste of the '900 in its beans. Interpreted by our pasta makers in combination with pure Latemar water, it restores warmth and color with a frank and vigorous, deeply Italian temperament. Raw it recalls jute bags and licorice root. In cooking it recalls fresh milk, chestnut peel and boiled potato. In the tasting, soft and nervous, you can find the sweet taste of the breadcrumbs and a curiously salty finish.
