The wine
Born on the Montenisa Estate, Conte Aymo is produced with Pinot Noir grapes. The typicality of the vine gives the wine structure and personality. The long aging on the lees, combined with the delicate notes of red berried fruit, make it a complex and elegant wine.

Vinification
The whole bunches of Pinot Noir, harvested manually, were directly subjected to a soft pressing and the 'flower' must, obtained from the first pressing, was transferred to stainless steel tanks where the first alcoholic fermentation took place at a controlled temperature. In the spring of the following year, the wine began the second fermentation process in the bottle, remaining in contact with the lees for a long period.

Tasting notes
The elegance and personality of Conte Aymo are the ideal accompaniment for both fish and meat dishes of medium and high gustatory intensity. The ideal serving temperature is between 7 and 9 °C.

Historical data
The Montenisa estate is located in the heart of Franciacorta, around the village of Calino, near Lake Iseo. The vineyards surrounding the villa owned by the Maggi family have been the heart of the production of Marchese Antinori Franciacorta since 1999.
