Winemaking
Soft pressing of whole grapes with pneumatic presses.
Natural cold sedimentation.
First fermentation in stainless steel tanks; constant temperature control.
Long stay on fine lees with frequent pumping over.
Parceling in individual steel tanks,
refinement in tanks and draft in the spring following the harvest.

Refinement
Minimum 40 months on the yeasts.

Color: bright straw yellow, with golden reflections.
Perfume: fresh white oriental flowers.
Taste: fresh and harmonious, fragrant and savory with a fine and elegant bubble.
