Natural cold sedimentation.

First fermentation in stainless steel tanks; constant temperature control.

Long stay on fine lees with frequent pumping over.
Parceling in individual steel tanks,
refinement in the tank until the cuvÈe is assembled and drafted in spring.

Refinement
Minimum 25 months on the yeasts.

Color: bright straw yellow, with golden reflections.
Perfume: fresh white oriental flowers.
