Pest control: integrated pest control with low environmental impact.
Harvest: the first ten days of October.
Harvest method: by hand in small boxes.
Winemaking: The grapes are carefully destemmed and crushed. The fermentation takes place with maceration on the skins at controlled temperature in stainless steel containers. Run frequent pumping, for a period of about three weeks, in order to extract color and aromas from the skins. Then the pressing takes place.
Ageing: Maturation for about twelve months in small French oak barrels. The bottled wine is normally aged in temperature-controlled rooms for at least four months.
Sensory characteristics:
Color: deep ruby red, almost impenetrable, with purple reflections
Bouquet: powerful and austere, elegant and very intense; notes of fig, plum, raisins and melon smooth fused with feelings of roasted cocoa beans, coconut, vanilla, marjoram, nutmeg and caramel.
Taste: rich, powerful and complex, with tannins integrated into a sweet fruity note. Balanced acidity, with hints of pomegranate; aftertaste by delicate notes of spice and cherry pasta. Lingering.
Pairings: Game feathered, red meats, roasts, cheeses of medium and long aging
