Winemaking: The grapes are carefully destemmed and crushed. The fermentation takes place with maceration on the skins at controlled temperature in stainless steel containers. Run frequent pumping, for a period of about three weeks, in order to extract color and aromas from the skins. Wine is then racked.
Ageing: Maturation for twelve months in steel and small French oak barrels. The bottled wine is normally aged in temperature-controlled rooms for at least four months.
Sensory characteristics:
Color: violet red almost impenetrable.
Bouquet: penetrating, fresh and firm. Plum, wild strawberry, musk, lemon blossom, red currant, tobacco and white pepper, balsamic reminders.
Taste: soft and engaging the attack accompanied by an elegant flavor and lively and pleasant tannins. Notes of cocoa, raspberry, dates, cumin, cherries, hint of herbs that recall the nose.
Serving suggestions: Tasty first courses, meat, roast beef and pork, medium-aged cheeses.
