Winemaking: The grapes are gently de-stemmed and left to macerate for a short period. It is then gently pressed and the must is allowed to settle. The must is then fermented in temperature-controlled stainless steel containers.
Ageing: After fermentation the wine was left on the lees in stainless steel containers for six months. The bottled wine is normally aged in temperature-controlled rooms for at least two months.
Sensory characteristics:
Color: straw yellow with green highlights.
Bouquet: very intense, complex and varietal notes of black currants, gooseberries, elderflower and oleander, tomato leaves and lemon balm blended to tropical fruits.
Palate: classic and impact, personal, lively acid. The mouth is surrounded by feelings of papaya, pomegranate with hints of asparagus and tropical aftertaste.
Serving suggestions: Excellent as an aperitif, it is an outstanding partner for asparagus, vegetable soups, creamed pulses and marinated fish.
