Winemaking: The grapes are gently de-stemmed and left to macerate for a short period. Then it is gently pressed and the must is allowed to settle. The must is then fermented in temperature-controlled stainless steel tanks.
Ageing: After fermentation the wine was left on the lees in stainless steel containers for six months. The bottled wine is normally aged in temperature-controlled rooms for about two months.
Sensory characteristics:
Colour: Straw yellow with greenish hues.
Bouquet: delicate and persuasive, among the scents are recognized: rennet apple, musk, sour cherry and sweet citrus notes, lime and cedar.
Taste: lively thanks to nice acidity, aftertaste is fresh and balsamic, minty with hints of thyme.
Serving suggestions: Excellent as an aperitif, this wine goes beautifully with battered vegetables and flans, with strong cheeses and dishes based on fish.
