The Ribolla Gialla grape variety, with its high acidity, lends itself very well to being made into a sparkling wine, giving life to a dry, structured and elegant wine.

A soft pressing carried out with pneumatic presses, after selecting the bunches, is followed by static decantation of the must and subsequent fermentation in thermo-conditioned steel tanks at a controlled temperature (about 18°C) with the use of selected yeasts for about 8/10 days. The refinement takes place in steel for a period that varies from three to four months depending on the characteristics of the harvest.

Excellent as an aperitif, it adapts very well to light preparations based on fish and vegetables.

Extremely clean nose, with notes of citrus and green apple. On the palate it is fresh, complex and mineral, with a fine and persistent perlage.
