HISTORY: Kyoto Distillery is Japan's first artisan gin distillery. Produced in Kyoto, the historic capital, a symbol of tradition, history, art and craftsmanship as well as the home of sake. The momentum of KI NO BI is all about the bond with local artisans and farmers: the bottle, the design, the legendary Fushimi water, the rice distillate and the botanicals. The production process is very laborious, inspired by a maniacal search for perfection and the desire to produce the best gin in the world.
PRODUCT: An exclusive liqueur made from perfectly ripe Kyoto-grown plums, harvested from Akio Tanaka's farm south of Uji at the height of the season and steeped for several months in the award-winning KI NO BI Gin. When optimal extraction is achieved, the plums are removed and the Hokkaido haskap berries are added for a few weeks. At the end of the maceration, sugar from the northernmost island of Japan is added.
PROFILE: Haskap comes from the word Ainu which means "the little gift at the end of the branch": These berries belong to the honeysuckle family and are also known as «honeyberrys». "BAI" is another word with which ume plums are called .
