The history of Grondona began at the beginning of the 19th century, an ancient milling factory that in the space of a few decades developed its own production of biscuits for the best shops in the city of Genoa. A history handed down from generation to generation also thanks to the contribution of grandfather Orlando and his work notes, which have become a reference and a wealth of knowledge. His notes, taken in the black notebook, have allowed us to learn the traditional recipes, confided by the housewives of the place, the secrets and observations on the techniques of kneading, cooking and maintaining the natural yeast, the Madre Bianca. The same one still used today.

The family philosophy has been passed down from one generation to the next starting with grandfather Orlando. He and his notes, jealously guarded in his notebook, have become the maximum reference and inspiration for the brand. This notebook contains delicious traditional recipes entrusted to him by local housewives at the beginning of the 1900s. The compendium also includes grandfather Orlando's notes and observations on the techniques of kneading and preserving the natural sourdough called Madre Bianca, which is still the basis of Grondona's recipes today.
