In Alsace the wines produced are mostly white and constitute approximately 20% of the entire French production. The names of Alsatian wines derive from the vine used. The Joseph Gruss company has been involved in the production of quality wines, with limited annual production, for three generations. The vineyards have a yield that varies from a minimum of 25 quintals per hectare, for the Grains Nobles selections, to 80 quintals for the grapes intended for sparkling wine. The harvest is still done strictly by hand. The winemaking is traditional in old oak barrels.
