History
Founded in 1798 in the Orkney Islands, Highland Park Distillery is the most remote in Scotland, in the wild Orkney Islands, off the north coast of Great Britain. Orkney is the archipelago of islands ruled by the Vikings for over 600 years. And it is to those legendary people that the distillery's production pays tribute. For over 200 years, every bottle of Highland Park has been produced in strict compliance with the 5 "cornerstones" on which the distillery bases its work: the slow-burning aromatic peat from Hobbister Moor; the hand-turned malt; the Sherry-seasoned European oak casks; the cold maturation in the island climate; the long harmonization process, without the slightest rush.

Production method
The distillery has 4 stills, 2 wash stills and 2 spirit stills, and a sturdy copper and brass "spirit safe" for spirits. They were made by Forsyth's, a renowned distiller in Speyside. 20% of Highland Park malt is peated. This process, however, gives very different results compared to Islay whiskies due to the nature of the peat used: until the Neolithic the islands were submerged and the oldest layers of the earth were nothing but the seabed. The whisky also owes its final balance to the ageing in ex-sherry oak casks at a temperature with little temperature variation throughout the year due to the peculiar climate of the Orkneys.
