Maturation of 40 moons (about 40 months) and a blend in which I use Pinot Noir vinified in white.
No added sulphites. Evolution on the nose, dry and explosive on the palate.
Oxidation, due to the way I work, must remain in balance with the other sensations, leaving room for the vivacity of the wine.
