The company works about 14 hectares of vineyards with various qualities of grapes, mainly Chardonnay, Pinot Nero and Pinot Meunier located from 260 to 310 meters above sea level on soils composed of limestone, clay and sand. THE
In the vineyard no synthetic products are used, but only small quantities of copper and sulfur in case of need.
The harvest takes place with a scrupulous manual selection of the grapes and transported with crates to the cellar.
Fermentations are spontaneous through indigenous yeasts in all passages.
The long stay on the lees and the manual disgorgement "à la volée" tell the long and tiring work that Casa Caterina carries out to give emotions to all consumers.
Casa Caterina is the symbol of a sparkling wine area that approximates its production ideal to that of small récoltant-manipulants from across the Alps, with the desire to move away from the canonical patterns of average Italian production to generate wines of great complexity and structure, destined to meet the favors of time after long evolutions.
Located in Monticelli Brusati, one of the municipalities that is part of the disciplinary of the classic method in Lombardy, but the Del Bono family is not interested in this "restrictive" recognition, they want to freely express their way of making wine.
