Vinification:

After harvesting, the grapes are immediately subjected to a soft cold pressing, followed by the first fermentation that enhances the characteristic notes of the vines. After a few months in steel, we proceed with bottling for the second fermentation and the second fermentation at a temperature of 14° C

Aging: 36 months in the bottle on its own yeasts at 12 - 13° C

Sensory profile: The color is straw yellow with golden reflections, brightened by a fine and persistent perlage.

On the nose it is complex, with floral sensations, of white pulp fruits and citrus fruits.

On the palate it presents itself with a rich structure, dry and vertical. It leads to citrus and mineral sensations in the long aftertaste.

Tasting temperature: 4 - 6° C
