GRAPE VARIETY: 100% Passerina.
AVERAGE ALTITUDE: 350 meters above sea level
SOIL: Medium texture tending towards clay
TREEING SYSTEM: Guyot.
PLANTING DENSITY: 5,000 vines per hectare.
YIELD PER HECTARE: Approximately 60 quintals of grapes.
YIELD PER VINE: Approximately 1.3 kg of grapes.
HARVEST: Manual, early in the morning
FERMENTATION: After destemming, the grapes are
left to cryomacerate in the press at 0°C for approximately 8/10 hours.
After this time, a soft pressing takes place and
only the free-run must is used for this wine.
The fermentation takes place in steel tanks
at a controlled temperature of 15 °C.
The subsequent refinement continues until the end of February
on the fine lees, which are stirred
weekly to give the wine more structure.
