Once upon a time... in the historic center of Prato, a charming Tuscan city, there was a bakery that produced Bread, Pasta and Cantucci: Antonio Mattei's bakery, located a few steps from the Palazzo Comunale, and overlooking one of the main streets of the city, was the destination of the 1800s. Every day the smell of warm bread spread throughout the street and the baskets full of bozze and rolls took various directions; the supply for the Cicognini College, the canteen of the Seminary, that of the Misericordia hospital, but also the Florentine retailers, where the "bozza pratese" had already been appreciated and known for a long time. But on Sundays... on Sundays after the first batches of bread, the smell of bread gave way to that of other specialties and the finest "noses" could have fun guessing what Antonio Mattei was churning out: Cantucci with anise, Almond Biscuits, Schiacciata Fiorentina, Biscotti della Salute, Mantovane cakes, Paste Regine, Savoiardi.... That oven is still there and on the two entrance "windows" the old restored sign still stands out: Antonio Mattei maker of Cantucci, Biscuits and other products. And it is precisely here that the recipe for Prato Almond Biscuits was created, today known throughout the world (with the name of Cantucci or Cantuccini).
