Vinification
Upon arrival in the cellar, the grapes were destemmed and pressed. Maceration lasted 6 days at a maximum temperature of 27-28 °C. The malolactic fermentation, which ended in mid-December, preceded the refinement that took place in stainless steel tanks. The Dolcetto was bottled in spring.
Historical data
Dolcetto, a historical wine of the ancient Piedmontese winemaking tradition, meets refinement in steel, to enhance the fragrance and vinosity of the fruit, typical of the variety.
Tasting notes
The wine has a lively ruby red colour. The nose is vinous, characterized by notes of flowers and ripe fruit. On the palate it is full and harmonious with a pleasant almond aftertaste.
