THE WINE
It comes from the estate vineyards within the geographical mention
Nervo on the border with the nearby Bernardot. The notable slope of
this side makes the vineyard more difficult to work but
improves drainage and solar radiation. The perfect
microclimatic condition and the “poverty” of the white marls (sandy-limestone) give the wine vertical tension and extreme finesse.
On the palate it releases a dense and mineral material; hints of raspberry,
cinnamon and fresh mint, then a finish characterized by a linear
tannic texture.
Serving temperature: 16°C
VINIFICATION
Harvest:
by hand in crates, in the first ten days of October (with possible
variations depending on the seasonal climate trend).
Fermentation and maceration:
at controlled temperature in steel tanks without exceeding 30°C,
for a duration of approximately 3-4 weeks. At the end of the primary fermentation, malolactic fermentation
followed, which normally ends in about a month.
Aging:
in large Slavonian oak barrels for about 12 months, then in concrete
tanks for another 6-9 months and then in the bottle before
marketing.

sandy veins.
