THE WINE
It comes from the estate vineyard within the geographical mention
Pajorè, a cru that is rightfully among the most renowned in the Langhe.
The southern exposure and the geomorphological conditions are
absolutely favorable.
The result is a persuasive expression that combines harmony and strength,
with notes of medicinal herbs, wild strawberries and cloves. A
Barbaresco with a strong personality, recognizable by its balsamic
and spicy tones.
Serving temperature: 16°C.
VINIFICATION
Harvest:
by hand in crates, in the first ten days of October (with possible
variations depending on the seasonal climate trend).
Fermentation and maceration:
at a controlled temperature in steel tanks without exceeding 30°C,
for a duration of about 3-4 weeks. The end of the
primary fermentation is followed by malolactic fermentation which
normally ends in about a month.
Aging:
in large Slavonian oak barrels for about 12 months, then in concrete tanks for another 6-9 months and then in the bottle before being
released for sale.

Soil composition: calcareous-clayey marl.
