Grape Variety: Croatina, Cabernet, Merlot e Barbera.
Harvest: Manual harvest in small plastic crates
Fermentation protocol: Temperature-controlled alcoholic fermentation in statinless steel vats.
Winemaking: Partial destemming and partial whole-cluster fermentation, 8/10 days maceration on the skins (in part ‘carbonic’ maceration) with periodic “délèstage”. Malolactic fermentation in stainless steel vats
Elevage: 7 months in stainless steel vats.
Colour: Inky purple colour with a violet edge.
Aromas: Broad, intoxicating bouquet combining the grapey, plummy accents of the Croatina and Barbera variety with the elegant notes of ‘cassis’ and shaved pencil from the Cabernet and Merlot varieties.
Taste: Voluptuous, brambly palate. Waves of blackberry fruit and blue owers, with hints of black pepper and herbs. Long-lasting, fruity nish laced with ripe, sweet tannins.
Food pairing: A natural match for a variety of rustic, hearty food preparations, from burgers to the classic winter-season recipes of North Italy (”bollito misto”, “brasato”, “cotechino”, escargot, cassoulet etc.).
