Entirely manual towards the end of October, at optimal phenolic maturation. The grapes are then destemmed and almost whole berries ferment in steel vats at a controlled temperature to carry out the alcoholic fermentation. Maceration (must/skin contact) lasts the duration of fermentation.
Refinement:
24 months in 2 hl French oak barriques
12 months in bottle before marketing.
Intense ruby color with strong garnet reflections. Broad and complex bouquet, decidedly fruity and ethereal in youth with clear spicy hints. Marked sensations of cherry and fruit jam, currant, rosemary, tobacco and cinnamon. Dry, warm flavour, broad structure and aromatic persistence and long finish. A wine with a strong personality and representativeness of the territory, destined for a great future.
