The grapes: 95% Nebbiolo-Chiavennasca; 5% other local grapes
The vineyard: Vineyards in some of the best crus in the Sassella subzone – Minè, Longoni and Chiesa Sassella – provide the grapes cultivated using the arched variant of the Guyot system (3500 vines/hectare), grown on stony, shallow and prone to drought soils, at an altitude of 400-450 metres, with a yield of 5 tonnes per hectare.
Vinification and aging: the bunches, picked at the beginning of October, were vinified by the red wine method, in special temperature-controlled containers. Maceration lasted 8 days. After a period in steel containers, in December the wine was transferred for aging in 35 and 52 hl French oak barrels for 24 months.
The wine: Sassella has a brilliant garnet colour; complex perfume with mellow fragrance of raspberry jam and with hints of rose bush and ripe black cherry; full but softbodied flavor, with great elegance and harmony, with a pleasant background of dried plum, spice and a long finish.
Analytical data: alcohol 13.20%; total acidity 5.10 g/l; pH 3.69;sugars 1.00g/l; extract 27.30 g/l. Ideal conservation: 5/7 years in bottles on their sides in a cool dark environment.
Food pairings: roast red meats, lamb, kid, game and mature cheeses. Serving temperature: 18°C.
