The grapes: 95% Nebbiolo-Chiavennasca; 5% other local grapes
The vineyard: Vineyards in some of the best crus in the Inferno subzone provide the grapes cultivated using the arched variant of the Guyot system (3500 vines/hectare), grown on terraces exposed to the south with loose sandy soils, at an altitude of 400-450 metres, with a yield of 5 tonnes per hectare.
Vinification and aging: the bunches were vinified on their skins in special temperaturecontrolled containers and maceration lasted 6 days. After a period in steel containers, the wine was transferred for aging in 35 and 52 hl French oak barrels for 20 months.
The wine: Inferno has a ruby red colour with garnet tints; the perfume is well pronounced and composite with dominant notes of bitter spices (cloves, cinnamon), and plum jam; the flavour is dry, savoury and austere, harmonious with an elegant bitter finish of toasted hazelnut. It is a long-lived, firm, vigorous and wellstructured wine.
Analytical data: alcohol 13.5 %; total acidity 5.10g/l; pH 3.69;sugars 1.00g/l;extract 27.50 g/l.
Ideal conservation: 5/7 years in bottles on their sides in a cool dark environment.
Food pairings: roast red meats, lamb, kid, game and mature cheeses. Serving temperature: 18°C.
