Variety: 100% Pinot Noir.
Terroir: a mixture of Bas-Chenevery and Crais-Gillon.
Viticulture: vines cut into Guyot. The shoots are crushed and spread on the ground to improve its aeration and microbial life.
Vinification: manual harvesting, maceration for 5-7 days, fermentation with indigenous yeasts at controlled temperature (max 33 ° C), pigeage and reassembly. Aging is done for 12 months in cask (10% new oak, first settling), decanting, then 3 or 4 months of aging in stainless steel tanks, (second sedimentation), then bottled (without filtration or gluing).
Annual production: 2500 bottles.
The wine: ruby color. Fine and fresh nose, with aromas of red fruits. On the palate it is aromatic and sweet on red fruits (strawberry, currant, ...).
