In Trentino the production of this wine, which has a strong point in the Teroldego grapes and maintains high quality.
Novello wine is tasted in combination with chestnuts, but it also goes well with other dishes, due to its fresh and fragrant fragrances.
Obviously the basis is to make it with 100% Teroldego grapes.
How is Novello di Teroldego made? Novello vinification is a process of processing grapes with whole berries. A few days before the harvest of the grapes destined for Novello, a small quantity of grapes is harvested to prepare the starter must. Then the grapes are harvested and the whole berries are placed in the vats where the must of the grapes harvested for the starter ferment. The grapes ferment an environment rich in carbon dioxide and carbonic maceration takes place, which lasts eight days at a temperature of 30 degrees. Carbon dioxide attacks malic acid, giving roundness to the must. The grapes are then pressed together thus starting the true fermentation process in red for two days.
Subsequently it is drawn off, the grapes are lightly pressed and the fermentation is completed. After a few weeks of settling the Novello is ready to be bottled. The specification provides for it to be put on sale from October 30th.
